You're right...almost all "new monastic" communities I've come across started with singles or childless couples. We only had one kid around when we started, but have babies and toddlers and kids, oh my!
I think some of the older communities that are still around--the ones that started in the 70s and 80s had kids from the get go. You might want to talk to some of them (Church of the Sojourners in S.F., Reba Place in Chicago, Church of the Servant King in Eugene, Oregon, and there are others).
